Recipe

Hot Milk Sponge Cake  (can also be used to make cherry pudding.)

4 eggs
2 C sugar
1 C boiling milk
2 C flour
2 tsp. baking powder
1 tsp. vanilla
(2 C fruit, if used for cherry pudding, sweet or sour cherries, drained)

Beat eggs and sugar 20 minutes. Sift flour and baking powder 3 times.
Add vanilla then add flour and milk alternately to egg mixture.

(For pudding: Fold in flour covered cherries)

Pour into sheet cake pan. Bake in moderate oven 350 degrees for approximately one hour. Check to see if it is done prior to one hour.

This recipe was a favorite of Genie’s grandmother. Perhaps it was handed down by her great-grandmother. We thank her for sharing it.
